Vegan muffin-brownie-cake
250g flour (you can use ANY flour – wholemeal, spelt, plain )
75g ground almonds
250g brown sugar
1 heaped tblsp coca powder
1 tsp baking powder (2 if you want lighter muffin like cake)
250g apple compot
275ml soya milk (vanilla soya milk is really nice in this recipe)
125ml sunflower oil
1 tsp vanilla extract
1 sachet vanilla sugar if you can get it (can be omitted)
150g organic fair-trade high percentage dark chocolate (melted)
Heat oven to 180 degrees c
Mix together the dry ingredients
Add soya milk, oil, vanilla extract and compot
Stir in melted chocolate
Pour into individual muffin moulds (silicone are best) (or if you prefer you can use a large mould to make a cake, which you can serve in slices – see picture)
Cook for 20 mins, until an inserted skewer comes out clean
Allow to cool completely before removing from molds
Grate some dark chocolate on the top, dust with icing sugar and serve with cashew nut cream

Cashew nut cream (an alternative to soya cream and dairy)
Thank you Jinny and Ju for this fabulous recipe.
This is an amazingly simple recipe and produces an incredible substitute for dairy or soya cream. This recipe has surprised non-vegans at how creamy it is.
50g cashew nuts
50mls fruit juice (apple, orange, pineapple- depending on what you have, and how sweet you want the cream to be)
Whizz up the nuts in food processor or crush in a pestle and mortar. Add juice and keep processing. Add more until the consistency of crème fraiche.
If you want it thinner just mix in more juice.
It is that simple.
You can serve immediately. If stored in a fridge add more fruit juice to thin the cream, before serving.

We received an email from a company based in France, who manufacture vegan products… The website is available in French, English and Spanish.
“We are called Le Sojami and have been established in South West France for 13 years. We manufacture vegan products only and they are also certified organic and lacto-fermented (except for the rice-milk desserts). They are alternatives to dairy products, including vegan fresh cheese, vegan pates, tofus, vegan ice creams, biscuits, egg and dairy free mayonnaise etc.
“The lacto-fermentation process using soya milk we use is patented. We are the only manufacturer of lacto-fermented organic vegan cheese. You should be able to find our products in virtually all health shops in France. We are also going to be distributed in the UK from next month.”
17th July 2010 Beer festival in heart of France – featuring vegetarian and vegan beers
Felletin is hosting it’s first Fête de la Bière, next month. Featuring beers from Wales, Austria and Germany, in addition to locally brewed beers (there are three breweries in the department of La Creuse, one in Felletin, and one located 3km from it). Fellis, the beer brewed in Felletin is vegan.
Andrea and Bruce, who run a vegetarian B&B, in the beautiful market town of Felletin, have been involved from the start in the organisation of the event. “We have been planning this for over a year. In February we went to Wales with a group of people from the association to sample some British beers,” Andrea explains. “By chance we attended the Wrexham beer festival on the evening Wales played France in the 6 nations. I turned up with my 6 French friends drapped in French Flags, and we got a few odd looks at first, but everyone had a great time.” Andrea and her French friends brought beer back from Wales for the festival.
The Felletin beer festival will also have a vide grenier (a car boot sale) and live music. Andrea and Bruce will also be ensuring there is vegetarian food available.
Where to stay? Well, if you want to stay within staggering distance of the festival you are going to have to be quick. The vegetarian guest house, 3 Place des Arbres, is almost full. However the apartment is still available to rent for the week (252euros) or just the weekend (204euros for 3 nights).

The vegetarian chambres d’hôtes, 3 Place des Arbres, not only provides guests with large luxurious rooms and fabulous vegetarian and vegan meals, but also allows people to choose self-catering if they wish.
The apartment has been available for some time and guests can choose to eat in the chambres d’hôtes if they wish. There is now a second option. Chambre 3 has a brand new kitchen and guests can choose to self-cater, or eat in the chambres d’hôtes, or a combination of the two.

International Meat Free day (journee sans viande) – 20th March
March 20th 2010 is the International Day without Meat (journee sans viande).
To celebrate between 4pm-7pm 3 Place des Arbres (Vegetarian Chambres d’hotes, Felletin, 10k from Aubusson in the department of La Creuse(23), Limousin, France) will be opening its doors, offering you a chance to sample free vegetarian and vegan food, and a chance to win a vegetarian meal for 2 (free to enter competition).

As well as producing the vegetarian recipe book, Vegetarian Felletin, Bruce and Andrea (from 3 Place des Arbres, the vegetarian Chambres d’hôtes/bed and breakfast/guest house in Felletin, near Aubusson) have been busy producing greeting cards featuring their favourite recipes.
