Cashew nut cream (an alternative to soya cream and dairy)

Thank you Jinny and Ju for this fabulous recipe.

This is an amazingly simple recipe and produces an incredible substitute for dairy or soya cream. This recipe has surprised non-vegans at how creamy it is.

50g cashew nuts
50mls fruit juice (apple, orange, pineapple- depending on what you have, and how sweet you want the cream to be)

Whizz up the nuts in food processor or crush in a pestle and mortar. Add juice and keep processing. Add more until the consistency of crème fraiche.

If you want it thinner just mix in more juice.

It is that simple.

You can serve immediately. If stored in a fridge add more fruit juice to thin the cream, before serving.
